Vegan Cookies and Cream Cookies

1/2 cup (one stick) dairy free butter

1/3 cup granulated sugar

1/3 cup light brown sugar packed

2 tbsp dairy free milk - I used soy

1 1/2 tsp vanilla extract

1 2/3 cups ap flour

3/4 tsp baking powder

1/4 tsp baking soda

1/2 tsp salt

9 Oreo cookies broken up into larger pieces

Preheat the oven to 350°F and line a baking sheet with parchment paper.

Add the dairy free butter, sugar, and brown sugar to a mixing bowl or the bowl of the stand mixer fitted with the paddle attachment. Mix until creamed together.

Add the milk and vanilla extract. Beat again until well combined.

Add the flour, baking powder, baking soda, and salt. Mix until just combined.

Stir in the Oreo pieces.

Chill dough for 25 minutes.

Drop 1 tbs size balls into prepared cookie sheet keeping cookies about 2" apart.

Bake for 12-14 minutes, until lightly golden. Let cool on baking tray for 10 minutes before transferring to a wire rack to cool completely.
