Old Fashioned Peach Drop Cookies

1/2 c granulated sugar
1/2 c brown sugar
1/2 c dairy free butter
1/2 c canola oil or vegetable oil
1/2 tsp. vanilla extract
1 egg
1/2 tsp. salt
1/2 tsp. cream of tartar
1/2 tsp. baking soda
2 3/4 cups ap flour
1 cup peaches finely diced
In the bowl of a sand mixer, cream, the dairy free butter, and the sugars together. Add in all remaining ingredients except for peaches. Slowly folding peaches. The texture will be grainy, kind of like sand, but when you press it, it sticks together. Put in the refrigerator to chill for 30 min to 2 hours.
preheat the oven to 350°F. Line A baking sheet with parchment. scoop out and roll into a Hall an inch and a half to 2 inch cookies leaving at least 2 inches in between on the baking sheet. I had about five on a baking sheet bake for 18 to 20 minutes. Let’s sit on the tree to cool for about 15 minutes before transferring to cooling rack to cool completely. Enjoy!
