Red Velvet Crinkle Cookies

1 3/4 c ap flour

1/4 c dairy free cocoa powder

2 eggs

1 c granulated sugar

1/2 c dairy free butter

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp salt

Red food coloring if desired

powdered sugar

In the bowl of a stand mixer cream together the dairy free butter and the sugar until lighter in color. Incorporate the eggs. Add remaining ingredients and combine. Dough will be quite soft. Chill for at least 1 hour.

Preheat oven to 350° F and line a baking sheet with parchment. Scoop out chilled 1 1/2" size balls and roll in powdered sugar. Throughly coat. The more coats the better.

Bake for 11-13 minutes. Let cool on the tray for about 5 before transferring to a cooling rack to cool completely.
