Copycat Partake Cookies

1 c dairy free butter (2 sticks)

1 c brown sugar, firmly packed

1/2 cup granulated sugar

2 large eggs

2 tsp vanilla extract

2 1/2 cups + 1 tbs ap flour

1/2 tsp baking soda

1/2 tsp salt

Sprinkles for mixing in and on top


In the bowl of a stand mixer cream dairy free butter and sugars together.


Next add the eggs and vanilla extract and mix until combined.


Next add all remaining ingredients and mix on medium until a soft dough forms. Scrape down on the sides if needed.


Chill dough for 30 minutes.


Preheat oven to 300° and line a baking sheet with parchment paper.


Take chilled dough and scoop out 1 1/2" size balls. Slightly press down on balls of dough. Sprinkle a few extra sprinkles on top

of the cookies. Place about 2” apart on sheet. You can put about 5 cookies on a sheet.


Bake for 17-20 minutes. Let sit on the tray for 15 minutes once removed from oven before transferring to a cooling rack to cool completely. Cookies will continue to harden as they cool.
