Vanilla Buttercream

1 c plus 2 tbs vegetable shortening

1/4 c plus 2 tbs dairy free butter

4 1/2 c powdered sugar

4 tsp vanilla extract

2-5 tbs dairy free milk, as needed


In a stand mixer, combine shortening and dairy free butter with paddle attachment until blended and smooth. Scrape the bottom to ensure that they are totally mixed.


On a low speed add the vanilla and combine


Once combined, slowly add the powdered sugar a little at a time. Then add the dairy free milk until desired stiffness is reached.


Scrape the bottom of the bowl, and mix on medium-high until all is combined and frosting is light and fluffy - about 2 minutes.
