Cookies and Cream Cookies

1 3/4 cups ap flour

1 tsp baking soda

1/2 tsp salt

1 1/2 tbs cornstarch

1 1/2 stick dairy free butter (¾ cup)

3/4 c granulated sugar

1/2 c packed brown sugar

1 egg + 1 yolk

2 tsp vanilla extract

1/2 c semi sweet dairy free chocolate chips

8 Oreos, chopped

Preheat oven to 350° F and line a baking sheet with parchment. Chop Oreos in fourths. Set aside.

In the bowl of a stand mixer cream together dairy free butter and sugars. Combined until light and fluffy. Add in eggs and mix again on medium.

Add remaining ingredients except Oreos and dairy free chocolate chips. Mix until soft dough forms. Add in mix-ins and fold in with a spatula.

Chill the dough for 20 minutes or longer.

Scoop 1 1/2” size balls and place at least 2” apart - these spread! I fit 6 on a baking sheet.

Bake for 10-11 minutes. Let rest on the pan for 10 minutes before transferring to a cooling rack to cool completely.
