Chocolate Chunk Cookies

1 egg

8 tbs dairy free butter

2 1/2 c ap flour

3/4 c brown sugar packed

1/2 c granulated sugar + 1 tbs

1 tsp baking soda

1/2 tsp salt

2 tbs dairy free cocoa powder

2 tsp vanilla extract

1/4 plant based milk

1 bag dairy free chocolate chips

Combine dairy free butter and sugars in the bowl of a stand mixer. Add egg and combine.

Add in all remaining ingredients except the chocolate chips. Mix until soft dough is formed. Fold in the chocolate chips. place dough uncovered in the refrigerator for at least 3 minutes.

Preheat the oven to 350° F and line a baking sheet with parchment.

Take chilled dough and scoop out about 1 1/2” al- 2” size balls. Press down slightly on tops. Place 2” apart on tray.

Bake for 12-13 minutes. Let cool on the tray for 10 minutes then transfer to a cooling rack to cool completely. Enjoy!!!
