Accidental Lemon Cookies

2 tbs dairy free butter

1/2 c + 1 1/2 tbs granulated sugar

2 tbs light brown sugar

1/2 c dairy free milk (I used soy)

1/3 c canola oil (can sub vegetable oil)

3 tbs fresh squeezed lemon juice

1 tsp vanilla extract

1-2 drops lemon extract

1 egg

3 c ap flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt


Preheat oven to 350° F and line a baking sheet with parchment paper


In the bowl of a stand mixer, combine dairy free butter and sugar. Added remaining wet ingredients. Added remaining dry ingredients and combined slowly until dough forms. It should be thick and sticky.


scoop out dough in about 1 inch balls and roll in your hands to make round. Place about 1 1/2” apart on baking sheets and bake for 9-12 minutes.


Let Kuhl on the rack for about five minutes before transferring to cooling rack to cool completely. Top with glaze or anything that you desire. Enjoy!!!
