Waffle Cookies

For the Cookies:


1 stick dairy free butter

1/2 c granulated sugar

1 tbs light brown sugar

2 eggs

1 tsp vanilla extract

1 c ap flour

1/4 tsp salt

1/4 tsp baking powder

1 1/2 tbs dairy free nonpareils


For the Glaze:

3/4 c powdered sugar

2 tsp vanilla extract

2-4 tbs non dairy milk (I used soy) until desired consistency is reached

For the Glaze:

In a medium bowl whisk all ingredients together except nonpareils. Whisk until combined completely. Set aside.


For the Cookies:

Preheat your waffle iron to high. Let get very hot while you make the dough.

In the bowl of a stand mixer fitted with a paddle attachment, combine dairy free butter and sugars until all is light and fluffy.

Add eggs and vanilla and mix until combined.

Add remaining ingredients and combine until dough is smooth. Scrape down the sides as needed.


Spray waffle iron lightly with non-stick spray. Scoop about a tablespoon or a little less and put onto the hot iron. Cook for approx 2-5 minutes until lightly golden brown.

Take cookies off, and dip them while warm into glaze. Sprinkle nonpareils on while glaze is wet before it sets. Set on rack to drip and cool.
