3/4 c dairy free butter
3/4 packed light brown sugar
1/2 c granulated sugar
2 eggs
1 tsp vanilla
1 1/2 c ap flour
1 tsp baking soda
1 tsp cinnamon
dash of salt
1 c raisins
3 c old fashioned oats
Heat oven to 350 degrees F. Line a baking sheet w parchment and set aside.
In the bowl of a stand mixer, combined dairy free butter and sugars. Mix until light and fluffy, about 3 minutes. Add eggs and vanilla and mix again until thoroughly combined.
Add all remaining ingredients and mix well.
Chill dough for 30 minutes.
Place 1" size balls on baking sheet approximately 1 1/2" apart. Bake for 12-13 minutes, until edges just start to brown.
Let cool on baking pan for 5 minutes before transferring to a wire rack to cool completely.
