Copycat Levain Chocolate Chip Cookie Recipe

1 c dairy free butter

1 c light brown sugar packed

1/2 c granulated sugar

2 eggs

3 c ap flour

1 tsp cornstarch

3/4 tsp baking soda

1 1/2 tsp vanilla extract

3/4 tsp salt

1 bag dairy free chocolate chips

Preheat the oven to 410°F and line a baking sheet with parchment.

Cream in the bowl of a stand mixer the dairy free butter and the sugars. Cream for 2 - 4 minutes until it's light.

Add in eggs and mix throughly.

Add all remaining ingredients except chocolate chips. Mix until just combined. Do not over mix or cookies will be too dense.

Add in chocolate chips and mix again until evenly distributed.

Make very large dough balls on the prepared sheet - no chilling needed! They are about 2 1/2" in size, so approximately 5 cookies fit in a sheet.

Bake for 10 minutes - bottoms will be brown and tops will just have a touch of browning on them.

Let sit in the cookie sheet for 10 minutes before moving to a cooling rack to cool completely. Enjoy!!!
