Cinnamon Roll Baked Oatmeal


Baked Oatmeal

2 1/4 c rolled oats

1/3 c granulated sugar

1 tsp baking powder

1/2 tsp salt

2 tsp cinnamon

1/4 tsp nutmeg

2 c soy milk (or dairy free milk of your choosing)

1 egg

3 tbs coconut oil, melted

1 tsp vanilla extract


Cinnamon Swirl Topping

1/3 c granulated sugar

1 tsp cinnamon

2 tbs coconut oil, melted

2 tbs nut butter of choice to drizzle on the top


Preheat oven to 350 degrees F.


Mix all baked oatmeal ingredients together in a large bowl until well combined. Let sit on the countertop for approx 5 minutes, until you notice the mixture thickening slightly.


Transfer to baking dish (9" round or 8x8" square) and bake for 35-45 minutes until starting to brown on the top.


To make the cinnamon swirl, mix the sugar melted coconut oil together. Place in piping bag and swirl on top of baked oatmeal. Option to drizzle melted nut butter on top.


*Note - the above was made by accidentally omitting the baking powder. It made a much denser cake, which we happened to thoroughly enjoy. But if you want a traditional loftier loaf, add it in!
